Our rums are made using panela from Columbia. Panela is an unrefined whole cane sugar made by the boiling and evaporation of sugarcane juice. It combines the best features of the molasses and fresh cane juice used in most rums. Double distilled in small batches using a copper pot still, our amber rum is aged for one year in small used rye whiskey barrels. Mt. Defiance Amber Rum has a sweet vanilla nose, toffee, honey and a hint of pineapple on the palette, and a finish of nutmeg, pepper, and clove.
